Amma's Madras Rasam
We had this rasam everyday of my growing up as a part of our daily meal. I never knew how much I would miss it once I moved out of home. That is mommy's cooking!
Less is more- simple and quick. This tasty rasam can be had like soup, mixed with rice with some nice accompaniments like pappads or murukkus. To die for!
Preparation Time:15 mins
Ingredients:
Dal: 1/4 Cup
Tomato: 1 Medium (cut in two if you are grinding)
Green Chillies: 2 (either ground or cut)
Tamarind: lemon sized- soak in 1/2 cup warm water
To Grind: (optional)
1/2 of the medium tomato
Cumin/Jeera seeds: 1/2 tsp
Green chillies: 2
Coriander leaves: 2 stalks (cleaned and roots cut off)
To Season:
Mustard Seeds: 1/2 Tsp
Chilli powder: 1/4 tsp
Curry leaves: 1 sprig
Black pepper corns: 5-6 - mashed.
Hing: pinch
Dried Red Chillies: 2 (optional)
Garlic: 2 (optional)
Oil: 2 tsps
Salt to taste
METHOD I (The easiest method)
1. Boil dal well and mash it up.
2. Mash the tamarind and throw away the pulp. Mix with dal. Add about 1 cup water.
3. Mash the tomato with the dal. Mix in the cumin seeds and cut green chillies. Keep aside.
4. Add in the oil for seasoning. Add mustard seeds, curry leaves, hing, dried red chillies, ground pepper, crushed garlic (optional).
5. Pour in the mixture that is kept aside. Add Salt.
6. Add chilli powder. bring it to boil. switch off immediately once the water starts bubbling/boiling.
7. Garnish with coriander leaves.
METHOD II (If you grind the "To Grind" Ingredients)
1. Boil dal well and mash it up. Mash 1/2 the tomato with this dal.
2. Mash the tamarind and throw away the pulp. Mix with dal. Add about 1 cup water.
3. Grind the (To Grind) ingredients. Now add the ground mixture to the above dal, mashed tomato & tamarind water. Keep aside.
4. Add in the oil for seasoning. Add mustard seeds, curry leaves, hing, dried red chillies, ground pepper, crushed garlic (optional).
5. Pour in the dal mixture that is kept aside. Add salt.
6. Add chilli powder. bring it to boil. switch off immediately once the water starts bubbling/boiling.
Serve hot with rice & crispy fries (yam/potato/fish: just about anything). Dont forget the appalams!! :)
